Beef Rendang Mamak Style

500gm beef cubes
350gm shallots
90m garlic
50gm young ginger
20gm galangal
10gm fresh tumeric
10gm lemongrass
1500ml cooking oil
5gm tumeric leaf
3gm kaffir leaf
800ml fresh thick santan
200gm kerisik
200 dry chilli paste
10gm tamarind

1. Blend shallot, garlic, young ginger, galangal, fresh tumeric and lemongrass.
2. Heat the cooking oil in the wok and add the blended ingredients. Cook till the paste turns slightly brown.
3. Add in dry chilli paste and cook till oil starts to break.
4. Add in beef and all remaining ingredients and cook in slow medium heat till the gravy thickens.
5. Garnish with fresh turmeric leaf.
